Sliders Are Just Small Sandwiches (And Other Lies We Tell Ourselves)

Yes, technically, sliders are just small sandwiches. But that’s like saying espresso is just small coffee. Size isn’t the point — concentration is. Every element has to earn its place, because there’s nowhere to hide in three bites.

Here’s how we think about it in our Costa Mesa kitchen.

The Bread Is Load-Bearing

A slider bun has one job: hold everything together while staying soft enough to compress in one bite. We use brioche — rich, slightly sweet, sturdy without being chewy. Toasted just enough to resist the sauce, never so much that it scratches the roof of your mouth. (We told you we were nerds.)

The Protein Does the Talking

Small sandwich, big protein standards:

• Grass-fed and finished beef from independent ranchers for our Smashburger and French Dip
• Pasture-raised chicken and pork for the Chicken Kabob slider and Cubano
• Everything hand-sliced in-house for peak freshness — no pre-sliced, plastic-wrapped mystery meat

When your patty is two ounces instead of eight, the quality of those two ounces is everything.

Sauce Math

We make 32 dressings and sauces in-house, every one of them with olive oil or avocado oil — never seed oils, never from a jug. On a slider, sauce is roughly 20% of every bite (we measured; see above re: nerds), so a bad sauce can’t be hidden behind bread and lettuce.

The Lineup

Our current rotation includes the Smashburger, French Dip (with real au jus), Cubano, Reuben, Muffaletta, Bánh Mì, The Bourdain, Cold Italian, Southwest BBQ, and Caribbean Club — plus a seasonal specialty that changes when inspiration (or the farmers market) strikes.

Sold in pairs, so you can mix and match. Ordering one kind is allowed but statistically rare.
